Guero chili literally means 'pale chili' or 'blonde chili', due to its unique pale yellow color. The guero chili is triangular in shape, with a thick skin. Similar in warmth to the Jalapeno, measures between 5,000 - 8,000 Scoville units. The color makes the guero chile an attractive addition to fresh salsas and salads; when roasted, the chili is richer in flavor. The guero chile actually ripens to orange and then red, but is best picked when it is pale yellow, as shown.This chilli has different names depending on the region from which it was harvested; also known as the Caribe chili, the Caloro chili and the Rio chili.
